When
John was working as Executive Chef at the Mandarin
in Manila, Laura commuted between London and
the Philippines. One of her discoveries
was Mother of pearl dishes and spoons. Mother of
pearl's beautiful lustre really complements the
caviar and, unlike silver or gold-plate, doesn't
oxidise in the caviar.
